Melty Cheese
What you need:
2 cups nondairy milk, divided (I use soy)
4 ounces pimentos
1 1/2 teaspoons salt
1/2 teaspoon onion powder
3-4 tablespoons nutritional yeast flakes
1/4 teaspoon garlic powder
2 tablespoons cornstarch
1/4 cup raw cashews
1 tablespoon lemon juice
What you do:
1. Blend cashews and pimentos in small amount of milk until smooth, add remaining ingredients (including milk), and blend to mix.
2. Cook in heavy sauce pan until thick, stirring constantly.

I tried this out today, it was quick and simple to prepare, I put it on to my mushroom lasanga, and it was very good
wonderful. i used this recipe for lunch and was very impressed. nice creamy, velvety texture. thanks.
I am back to say that this recipe is awesome. In order to save time I make up 5-6 "Melty Cheese" kits. In a quart bag, I put a 4oz jar of piementos, a sandwich bag with all of the spices, and cornstarch (or arrowroot works well also), a sandwich bag with washe'd and dried cashews. I label it with what I need to add and when I need "cheese sauce" quick most everything is in one place making meal preparation alittle easier.
Also I have used 1 cup of milk and 1 cup of water with good results.

Well, I just cooked up this recipe tonight and it was just marvelous!!!!!!!!!!!!!!!! This recipe open up a new area of cooking for me. I can't wait to try this "Melty cheese" with other foods.
I have always considered myself a good cook, but I am sitting in the back seat watching all of you people here. And, I am amazed at how many good cooks are out there. It takes great talent to come up with a recipe like this.
