Melty Cheese

What you need: 

2 cups nondairy milk, divided (I use soy)
4 ounces pimentos
1 1/2 teaspoons salt
1/2 teaspoon onion powder
3-4 tablespoons nutritional yeast flakes
1/4 teaspoon garlic powder
2 tablespoons cornstarch
1/4 cup raw cashews
1 tablespoon lemon juice

What you do: 

1. Blend cashews and pimentos in small amount of milk until smooth, add remaining ingredients (including milk), and blend to mix.
2. Cook in heavy sauce pan until thick, stirring constantly.

This is the best cheese alternative i've tried. Definitely a favorite one

I have been disillusioned so many times with "cheese sauce" recipes, but after reading the reviews, I decided to give this a try.....sooo glad I did!  It is wonderful and as another poster put it - it has opened up an many possibilities.  I am only on my second batch, but my ideas are running rampant!  Thanks so much for a real cheese recipe!

This is great! I didn't use pimentos, since I didn't have them on hand, but it turned out wonderfully! I used unsweetened plain almond milk, 2 fresh garlic cloves instead of garlic powder, and a bit of fresh onion instead of the onion powder. I also wanted to leave it raw, and even though it wasn't super thick, it was still a wonderful addition to whole wheat pasta with tomatoes and spinach. Also a great dip for pita chips!

It made quite a bit, and I have leftovers. I'll definitely be making this again.

oooohhhh this turned out GREAT for me. I used vanilla soy milk and threw in about 3/4 cups of cashews. I poured it over sauteed tofu, spinach leaves, onion, asparagus and mushrooms. Really tasty and I will for sure be using this waaaaay more often! Thanks so much for a wonderful recipe!!!!! Kiss

I am going to a super bowl party today so I made this recipe and added salsa to it to use as a queso dip....very good! Then I made a second batch and substituted jarred roasted red peppers for the pimentos, equally as yummy!

Oh my, this sauce is amazing!
This is the second recipe I've tried making for a cheese sauce and its perfect. I didn't add pimentos though, since I don't have any.
I'm eating it right now with elbow noodles. :D
I do think next time I will add less corn starch if I'm using it for macaroni. And probably no salt, since I don't really like salt.

I'm a new veg covert...so this is the first "cheese" I've made. Texturally, I think it's perfect....it doesn't taste like cheese to me at all. It's a good flavor for sure, just not what I expected. I mixed it with some soyrizo and put it on top of veggies for some nacho-esque flavors which was rad.
