Mel's Vegan "Scrambled Egg" Sandwich

What you need: 

1 tablespoon oil
1/2 small onion, diced
2 cloves garlic, minced
1/2 pound tofu, drained and pressed
1 to 2 teaspoons soy sauce
1 tablespoon curry powder
4 slices bread
vegan cheese (optional)
vegan sausage, fried and diced (optional)
avocado (optional)

What you do: 

1) Saute the onion and garlic in a little oil on medium-low, and crumble in tofu.Add the soy sauce and spices and stir well.
2) Once cooked, add any optional ingredients you wish and stir to mix in.
3) Toast your bread and put the tofu mixture in the sandwich. Enjoy!
Source of recipe: So I was never a huge fan of real eggs throughout my life but I did enjoy an occasional scrambled egg sandwich when I wasn't a vegan. Basically I put a few tofu recipes together to make it look like eggs and taste better than eggs :) Put this tofu mixture on some vegan bread with ketchup, maybe some vegan cheese...and there you go!
