What you need: 

4 tablespoons vegan margarine
5 cups cooked macaroni (8-oz. raw)
4 tablespoons all purpose flour
2 cups soy milk (I suggest fortified store brand, cheaper and has vitamins+minerals)
salt and pepper to taste
3/4 cup shredded vegan cheese (I prefer cheddar)
1/4 cup of vegan bread crumbs

What you do: 

In a saucepan, melt the "butter" over medium-low heat.
Gradually stir flour into the "butter" with a whisk, until smooth and bubbly.
Gradually add soy milk, stirring constantly.
Add grated cheese to saucepan.
Continue to cook, stirring constantly, until thickened. It will start out thin but it will eventually thicken with heat.
Now you can do two things with this: [BR] 1. Pour over macaroni and eat.[BR] 2. Place macaroni in oven safe container, coat with cheese sauce and lightly coat with vegan bread crumbs. Bake at 350 degrees Fahrenheit for 20 minutes.
