Lisa's Chocolate Cake
What you need:
1 cup sugar
1 1/2 cups flour
1 teaspoon baking soda
1/3 cup cocoa
1/2 cup oil
1 cup cold water
2 teaspoons vanilla
1/2 teaspoon salt
2 tablespoons vinegar
What you do:
1. Preheat oven to 375 degrees F. Mix first eight ingredients well (all but vinegar).
2. Add the 2 tablespoons vinegar and mix quickly until mixed well.
3. Bake for 25 minutes.
This recipe comes from my mother's friend, and I didn't even have to veganize it! It's probably the most moist cake I've ever had.

This cake is amazing. We enjoy it with a spread of apricot jam and chocolate icing. It is one of our favorite cakes and whoever tried it asked for the recipe.

I doubled the recipe but did not double the oil in it, just added 2/3 cup of oil and it still came out moist and wonderful as before. It yielded a lot of serves and was gone quickly again.
I was really excited to find this recipe because I had the exact same one scribbled onto an index card from several years ago (titled "Simple Chocolate Cake) and used to make it for every gathering I went to. Then I lost the card. Yesterday was my 10 year Veganiversary and I made this to celebrate! It is every bit as delicious as I remember!
