Late Night Single Serving Oatmeal Apple or Pear Crisp

What you need: 

cinnamon, to taste
nutmeg, to taste
sugar, to taste
pinch salt
1 apple or pear, bite sized pieces
1 (1-ounce) packet oatmeal (I suggest maple spice)
1 tablespoon vegan margarine

What you do: 

1. Preheat oven or toaster oven to 350 degrees F. Sprinkle sugar, cinnamon, salt and nutmeg, to taste on apple or pear, and mix with fingers.
2. Add to a small baking dish like a single serve Pyrex dish.
3. In a small bowl, empty oatmeal packet and add margarine. Mix with your hands until oatmeal is completely mixed. Pour over the cut apple or pear.
4. You can bake this in a conventional oven or toaster oven. I used my toaster over. Bake for 15-20 minutes or until the crust is lightly brown. Remove from oven and let stand a few minutes, then serve.
Tastes really good with vanilla soy ice cream or soy whipped cream.

SO HOW'D IT GO?

I've been making these heaps lately as a snack for the cold weather and I think I'm addicted!
I use two small gala apples, a decent amount of cinnamon and some brown sugar. I also add a little maple syrup over the apples before I add the oats on top. So good!

I actually found this recipe at 11 looking for a late night snack  :) which is weird
Well, i sadly couldn't make it right then, because my oven beeps really loudly and would wake evryone up, butttt I did make it the next day and it is VERY quick and easy and pretty yummy to top it all off.  I used Quaker Apple & Cinnamon instant oatmeal.

This is awesome! I'm so happy to see a single serving recipe which is exactly what I like and it allowed me to finally use my tiny baking dish. I added some sugar and cinnamon to the oatmeal because it was plain flavored and didn't use any nutmeg. The topping didn't get really crispy but I think I may have needed more butter.

I made this for breakfast this morning! I used pears, maple brown sugar oatmeal, and Earth Balance.  And of course cinnamon, nutmeg, and sugar.  I baked it in the toaster oven for 20 minutes.  I really liked it, but it felt like it was missing something! I think next time I'd find something to help make it a little more moist or gooey; it seemed kind of dry! But very mmmmm indeed!  :)

Thanks for posting! This was sooo GOOD!!! Made this for breakfast this morning & I'm so full used Cinnamon sugar that comes mixed because its what i had & added some almonds it was heavenly thanks  :)>>>

Mmmm... and so easy! I needed to make several servings, but used this as the base recipe. I used pears (4) and did not add any sugar to the fruit. I'm glad I didn't because it was very sweet on it's own! I was feeling lazy and just grabbed the pumpkin pie spice and used that, instead of individual spices. I did use maple and brown sugar flavored instant oatmeal packets (also 4 of them). So easy!!! I did not use margarine, as we try not to, but instead used 1 t of olive oil per packet and added a little salt.

At the last minute, I worried that the oatmeal mix was too dry and would burn, but I already had it on, so I used my olive oil mister to spray a tiny bit more on the top, but this might not have been necessary.

I've made this twice in not even a week already!
Its like a dessert, but relatively healthy.
The first time I used an apple & dried currants for the fruit. For both times, I omitted the butter and the sugar and used 2 tbsp unsweetened applesauce to wet the oatmeal, which was unflavored. I baked it in a mug for 20 minutes then broiled it (to brown the top even more! yum!) for 2 minutes. I then drizzled it with low sugar syrup. Nom Nom.
The second time I had half of a leftover pear and half of a leftover banana so I layered those along with dried currants for the fruit. The banana got super gooey which was really nice.

i just made this without sugar and added in some raspberries instead, i also used plain oatmeal, i bet the flavored packets would be awesome though!  mmmm.  it was so simple and awesome!!

could you use other fruit for this?

I was just think that peaches would be delish! 

I haven't tried it but I don't see why not.  Peaches do sound so yummy.  Thank you for the idea.  I bet strawberries or cherries would work out great too.
