Catnip Granita
1 1/2 cup water
2 cup sugar
one large handful of fresh catnip
1 cup lemon juice
Start the granite by making a simple syrup: combine vegan sugar and water in a small pot. Bring to boil and add catnip. Simmer for about 5 minutes, or until all vegan sugar is dissolved and it has a nice catnip fragrance. Remove from heat, strain, and chill.
Once it is completely cool, add the lemon juice. It should taste a little sweeter than you prefer, as the frozen end product will taste slightly less sweet.
Pour into a large shallow pan (I use my lasagna pan). Put in the freezer. After about 30-40 minutes, or once ice crystals begin to form, scrape the pan thoroughly with a spoon or fork. Repeat every 20-30 minutes for 1 1/2 hours or so. Your granite is ready when it is completely frozen and looks like Italian ice. If you prefer uniform ice crystal size (like commercial sorbet), add a little water and pop it in the blender.
Garnish with lemon zest and little catnip leaves.
*So you of course are thinking, CATNIP?!? I made this accidentally, thinking what I stumbled across in my garden was a different type of mint. It, of course, was not. But catnip is supposed to have a calming effect on humans, and I personally think its delicious! Plus it grows like a weed so I never have a shortage.*
