Jake's Scrambled Eggs

What you need: 

1 pound firm tofu
1 tablespoon nutritional yeast
1/2 teaspoon turmeric
1/2 teaspoon onion powder
2 tablespoons bragg's or low sodium soy sauce
pepper, to taste

What you do: 

1. In a medium sized mixing bowl, crumble the tofu straight out of the package.
2. Add all ingredients and mix around with fork, until everything is evenly coated.
3. In an oiled skillet, cook the "eggs" for about 8 minutes on high heat, you'll know they are done when the "eggs" brown just a little.
Serve immediately!

SO HOW'D IT GO?

Yum!  I don't really know what real scrambled eggs taste like because they always creeped me out even as an omni, but these were really good.  My husband enjoyed them too for our "breakfast" dinner-served with hash browns.  Nice, simple, and basic.

Perfection! 3 cheers for jake. I've made many a tofu scramble in my day but I think I will stick with this one because of its simplicity and the taste factor.
I did not miss all the onions , mushrooms, spinach, yada yada that usually goes into a tofu scramble. Just keepin it simple like real scrambled eggs, although this tastes 50x better than real eggs.
I served it with fried potatoes and toast.
I made it exactly according to the recipe 'cept I used tamari in place of the braggs.

These are sooooo good!! I didn't have any nutritional yeast or tumeric though. I used curry powder and tossed in some leftover veggies (carrot, celery, yellow bell pepper) and it was amazingly good!  I'm going to get some nutritional yeast when I get paid and try them again, I bet they will be even better! I used to dislike tofu, but this recipe has changed my mind! I am eating ovo-lacto these days (trying to slowly transition to vegan) , but I will never eat real scrambled eggs again, these are so much better!!

I made this yesterday and it was so good!  My husband (the reluctant vegan) loved it too!

I've made these twice now and they really are quite good and very easy!  Be warned that when you first mix up the ingredients, it's a rather unappetizing light brown color but while you cook it the turmeric brightens it up to a nice sunny yellow.  I've mixed in mushrooms, onions and bell peppers for variation.  Thanks Jake!

Having never had scrambled tofu before I was a bit nervous to try this recipe but I am glad I did! These "eggs" were soooo delicious! Even better than the real thing! My fiance (a lacto-ovo) absolutely loved them too... now he doesnt want anything else. Thanks for the great recipe! ;D

Excellent alternative to scrambled eggs. This has a great flavor! I used garlic powder instead of onion powder and it turned out just fine.  You can do a lot with this. You can sprinkle a little cayenne pepper or paprika if your feeling spicy! Thank you for the recipe. :)

this is an amazing and versatile recipe, i've made it a few times, always with a slightly different twist.
it would also be good for mixing with leftover rice, to make fried rice  ;)b

o.k., just made this for breakfast. It was fantastic-my modifications; steamed some kale, just until soft, placed it to the side. Following the directions to a t except I didn't measure anything, just kinda winged it. Tossed everything together with some crushed red pepper-I like things spicy these days ::). The taste is to die for. The kale was a nice touch. Thanks for a simple and tasty recipe.
