Eggless Salad Sandwich

What you need: 

1 lb block extra frim tofu
2 stalks cellery, chopped tiny
3 green onions, chopped tiny
1/4 cup vegan mayo (Trader Joe's is good)
2 tablespoons brown mustard
1/4 teaspoon salt and pepper, red pepper flakes, celery seed
1/2 teaspoon soy sauce, rice vinegar and turmeric

What you do: 

1. Crumble the tofu into a strainer, lay a paper towel over it and press with something heavy while you chop the vegetables.
2. In a small bowl, combine mayo, mustard, and wet and dry seasonings and stir well.
3. In a second bowl, mix veggies and tofu. Mix everything together. It will be a little pale, and you can add more turmeric and mustard if you want it more yellow. The color will get brighter over night.
4. Pile on toasted bread with your favorite sandwich fixings!
Source of recipe: This is my dear friend Sheila's recipe from her Dogs Dig cookbook. She calls it "Tofu You"( I changed it slightly to my preference)
