Happy Vegan Chocolate Chip Cookies
2 cups unbleached flour
2 teaspoons baking powder
1/2 teaspoon salt
cinnamon, to taste, optional
handful vegan chocolate or carob chips
1 cup raw sugar (turbinado; sucanat works too, but sucks up a lot of the moisture)
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water
1. Very important-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works much better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350 degrees F.
2. In a large bowl, mix together flour, baking powder, salt, and cinnamon. Stir in chips. Make a well in the center and set aside. In a medium size bowl, add together sugar and oil; mix well.
3. Add the vanilla and then add the water; mix well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to.
4. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets (top to bottom and 180 degree rotation). Bake another 4 minutes and check them. The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in 2 minute increments from here until they get to where I like them.
5. Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.
These cookies have come a long way, lots of time and tasting spent on getting them to where they are now. Vegans and non vegans love them. SO HOW'D IT GO?
ok this time i tried it as someone suggested, and used less sugar and oil, and subbed some of the oil for unsweetened apple sauce, and i thought they were fine with the called amount of sugar. i didnt think they were sweet enough, but my bf loved them the same. didnt see the difference with the applesauce, so i'll try it again with a whole cup of sugar.
I don't understand why these get such good reviews. Maybe I'm doing something wrong? Anyway, I've made these in the past and didn't like them, but I forgot how bad they were and made them again..and they were awful.
this recipe is BOSS. I left out the cinnamon after trying it twice with. Much better w/out in my opinion. I have the average 19070's apartment oven in California and it took me 15 min total to cook 2 cookie sheets worth of perfection . I rotated the pans 5 minutes into the whole deal (180 degree turn and shifting the top pan to the bottom and vicaversa.)then I cooked for another 10 min. I listened to to advice of other cookie champions and I subtracted a little less than 1/4 of both the listed amounts sugar and oil.I omitted the optional cinnamon. I made 42 small cookies out of 1 batch which i flattened with my fingers and they came out chewy and perfect.They stay soft and chewy so long as you do not overcook them. "delicious" "like chip ahoy" "yummy"... those are 3 collected quotes.It is very easy to over do the choco chips because there is no stipulation in this recipe. 2/3 cup seems appropriate but I haven't measured yet.still i think these come out better if you do not overdose on the chocolate. It requires trust.
Theses came out delicious!! I subed 1/4 cup of apple sauce and a 1/4 of Earth Balance for the oil. I also used vegan granulated white sugar because that was all I had. My husband and I give this 4 thumbs up. ;)b ;)b ;)b ;)b
OMG!! Yum Yum.. I thought they were amazing. My non vegan husband thought they were great but a little bland! He missed the butter flavor. So next time I am going to try them with Soy Garden. I will make these again and again. :)>>>
The "add as many as you like" after the chocolate chips in the recipe is very misleading: I ended up putting in so many that the "cookies" crumbled because they dough couldn't stay together. They were dry, hard.. and gone within 24 hours of making them (granted, I halved the recipe). I. Loved. Them. My mother (who NEVER eats anything hard that I make.. ever) loved them. You, my friend, are wonderful.
I was surprised how good these were! I have not loved all the vegan food I've made, but these are a winner! I had to add almost double the water though cause they were just crumbly and falling apart. I only had white sugar so maybe that was it? I guess when I use raw sugar the next time I'll know! Thanks for sharing!
mine came out more like... rocks?
they were hard and looked nothing like what they were supposed to.
they seemed harder then jawbreakers.

These are great!
I've also made them with vegan white chocolate and roasted macadamia nuts , quite tasty as well...
these cookies are absolutely delicious! I added a whole bunch more cinnamon and usually have to add more water or oil. Seriously, these are good and a hit with my non-vegan family and friends!
