Greek Salad (Choriatiki)

What you need: 

6 small tomatoes or 3 large ones
1/2 cucumber
1 green pepper
2-3 spring onions
3-4 parsley
4-5 tablespoon olive oil (optional)
salt (optional)

What you do: 

Cut the tomatoes in pieces.
Peel the cucumber.
Cut the cucumber in round slices.
Cut the green pepper in strips.
Cut the spring onions in small pieces.
Cut the parsley leaves into small pieces (throw away the branch).
Throw everything in a bowl. Optionally add olive oil and salt. Stir and serve.

SO HOW'D IT GO?

This is a typical Greek style salad - more typical in Greece than what we know as 'Greek Salad' here in the States, and it's my favorite salad in the WORLD. My family makes this a little differently from this recipe - we use about a third of a yellow onion - VERY finely minced, no peppers or spring onions, and what makes this salad typically Greek to me is missing from this recipe - oregano. The tomato & cucumber can be a bit bland on their own - the dressing really makes this salad worthwhile.

Another tip - this salad benefits when you make the dressing about an hour or so in advance - mixing the oil & vinegar with the minced onion, salt, pepper & oregano - giving the flavors time to mingle & mature. Be sure to rub the oregano between your thumb & forefinger before adding it to the salad or dressing to help release the flavor better. Yum.
