Greek Roasted Potatoes

What you need: 

4 baking potatoes, peeled and cubed
3 tablespoons canola oil
1 tablespoon olive oil
2 tablespoons lemon juice
1 tablespoon garlic, minced
1 tablespoon oregano, dried
salt and pepper to taste

What you do: 

- Preheat oven to 450 degrees
- Boil potatoes for 5 minutes in salted water
- Drain and drop potatoes in ice water until cool
- Spread potatoes on baking sheet and drizzle canola oil; sprinkle with salt and pepper
- Sprinkle with salt and pepper
- Bake for 30 minutes, turning every 10 minutes
- When the potatoes are done, place in bowl and pour on the olive oil, lemon juice, garlic, oregano, and salt and pepper to taste
- Toss well and serve warm

A greek favorite! Serve it with a sour cream dip (with chives and parsley) and you are set! 8)
