Granola Parfait

What you need: 

3 cups oats
1/2 cup puffed rice cereal
1/2 nuts of choice (I used almond slivers)
1/2 cup dried fruit (I used craisins)
1 tablespoon flax seeds
1/2 teaspoon cinnamon
2 tablespoons brown sugar
3 tablespoons agave nectar
soy yogurt of choice

What you do: 

To make granola: combine all ingredients (except the soy yogurt) in a medium sized bowl and mix until the agave is spread throughout. You might need to experiment with the amount of brown sugar you use (the agave is pretty sweet in itself), because I'm a major sweet tooth and I like mine sugary. :)
To make parfait: in a fancy glass (I used a plastic martini glass) layer granola and yogurt, starting with the granola on bottom. I would use thicker layers of granola than yogurt, so your parfait doesn't get too mushy when eaten. You can prepare this in advance, but I would eat within the day, so the granola stays crunchy!
You can make many variations with this recipe; mine was cranberry almond granola with vanilla soy yogurt!
This is just kind of a fun way to dress up breakfast in the morning! If packing this "to go", I would pack the granola separate from the soy yogurt.
