Fruity Flax Muffins

What you need: 

 

1 middle sized banana, mashed

1 middle sized pear or apple, grated

1/3 cup vegetable oil

1/2 cup brown sugar

2 cup flour

1/2 cup ground flax

1 teaspoon baking powder

1/2 cup vegan milk or water

1 teaspoon vanilla

 

½ cup nuts, chopped (optional)

What you do: 

1. Preheat oven to 350 degrees F. Fill muffin pan with liners.  In a large bowl, mix together the banana, apple/pear, sugar, until well dissolved. Add oil, flax, flour, baking powder. Add milk/water gradually along with the flour.  Stir until well combined.

2. Pour into muffin liners and bake 30 minutes or until centers come out clean.  Remove from oven and allow to cool.

Serves: 12

Note: It should work with most flours, I wanted them to rise a bit, but did not want refined flour, so I used 1 cup whole wheat flour, 1/2 cup buckwheat and 1/2 millet flour.
