Fiber-full Maple Muffins

What you need: 

1 3/4 cups oat bran
1/2 cup rice flour
1/2 cup whole wheat, millet or oat flour
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup soy milk
1/2 cup maple syrup
3/4 cup applesauce
1/4 cup oil
sugar for tops

What you do: 

Preheat oven to 375 F. Line muffin tin or lightly grease and flour.
Stir together dry ingredients (oat bran to cinnamon) in a large mixing bowl. Add dry variations from below, if using.
Whisk together wet ingredients and add wet variations from below, if using.
Pour wet mixture into dry mixture and mix until combined. Transfer batter into prepared muffin tin, sprinkle tops with vegan sugar (raw turbinado is nice) and bake for approximately 18 minutes.
***VARIATIONS (try one or all together...the recipe above is plain)***
CRANBERRY -- substitute 1/2 cup of the applesauce with 3/4 cups dried cranberries that have been soaked in water (just enough to cover them)until they are plump. Add both the cranberries and the remaining water to the wet ingredients.
ORANGE -- 1/2 teaspoon fresh grated orange zest and substitute some or all of the soymilk with orange juice
WALNUT -- add 1/2 cup chopped walnuts
CORNMEAL -- substitute 3/4 cups of oat bran with cornmeal

SO HOW'D IT GO?

This is super good.
I needed to use up my wheat bran, as I don't like putting in in my oatmeal anymore.
I added a couple drops of stevia and went with the orange version, except all I did was add whole, pureed clementine. =)
Hurrah.

a good, basic bran muffin recipe, ready for additions and improvisations.  i like my muffins not-too-sweet, but not too bready, and this hit the nail on the head.
