Carrot Apple muffins

What you need: 

3/4 cup whole wheat pastry flour
1/2 cup oat flour
1/4 cup Sucanat + 1 teaspoon molasses
dash salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
flax eggs for 2 eggs
3/4 cup grated carrots
3/4 cup grated apples (with skins)
1/4 cup vanilla Silk (or regular nut milk + 1 teaspoon vanilla)
1/4 cup oil, margarine or more flax seeds
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon fresh grated ginger

What you do: 

Preheat oven to 350F. Grease or paper muffin tins. Mix the dry ingredients. Mix the wet ones. Mix them together. Pour into muffin tins, sprinkle with cinnamon sugar if desired. Bake around 15 minutes or until toothpick comes out clean.
* You can add raisins or pineapple if desired.

SO HOW'D IT GO?

beked them for more than an hour, i'd say 75 minutes.. and they still weren't done in the middle..  :-\ i guess this recipe doesn't work for big muffins.

the cooked part tasted good though..

these are awesome; nice and moist, not too sweet, and nicely spiced.  I increased the baking powder to 1 tsp, used ener-g egg replacer instead of flax eggs, replaced the oil with mashed banana, and used 1/4 tsp of ground ginger instead of fresh.  They still came out with a great texture, which sometimes doesn't happen when I replace the oil. I also had to bake them for more like 18 minutes.  These would probably be awesome with walnuts and/or raisins; I'll definitely make these again so I'll experiment in the future.
