PB and J French Toast

What you need: 

3/4 cup vanilla soy milk
2 tablespoons flour
Cinnamon, to taste
Vegan butter
1 tablespoon maple syrup
Peanut butter, to taste
Jelly, to taste ( I use strawberry)
2 slices bread

What you do: 

1) Take the bread and make a regular peanut butter and jelly sandwich. Make sure you do not put too much peanut butter and jelly on the bread.
2) Mix the remaining ingredients together (except vegan butter) in a separate bowl. Add as much cinnamon as you would like. Make sure there are as few clumps in the mixture as possible. Now take the Peanut Butter an Jelly sandwich and dip both sides in the mixture. Fry in the pan with the vegan butter until golden brown on each side.
3) Sprinkle with vegan powdered sugar and top with your favorite syrup. Enjoy!
I have also made this with vegan cream cheese instead of jelly and it came out just as good.
Source of recipe: I was craving some pb&j and some french toast and i couldn't decide between the two so I decided to put them together!

SO HOW'D IT GO?

Sounds good, but for some reason, vegan French Toast does NOT turn out right for me... it remains soggy in some spots and burns in others. Any advice?
