Easy Pumpkin Pie Cookies

What you need: 

1 (15 ounce) can pumpkin
1 cup non-hydrogenated shortening
1 cup sugar
1 egg equivalent, prepared (e.g., Ener-G Egg Replacer)
2 cups all-purpose white flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup nondairy chocolate chips

What you do: 

1. Preheat oven to 375 degrees F. Lightly oil baking sheets. Cream together (mix thoroughly by hand) pumpkin, shortening, and sugar. Mix in egg replacer.
2. Sift in dry ingredients (flour, baking soda, cinnamon, and salt) and mix again thoroughly. Fold in chocolate chips.
3. Drop heaping spoonfuls onto baking sheets. Bake approximately 30 minutes.
4. When done, let cool, then sit on paper towels to dry.
Enjoy! These cookies stay moist indefinitely!

These look and smell delicious! I haven't tried one yet and neither have my family BUT I know they will be awesome! (I tried the batter ;) ) hahaha
I added 1/2 a banana, and had no chocolate chips so I planned on adding some chopped almonds but I forgot! So they are just pumpkin with a tinch of banana. and I added a simple thin glaze on top (powdered sugar + almond milk + vanilla extract), then I sprinkled some cinnamon on top.

omg.  This is what true love tastes like, isn't it?

I added:
1/2 tsp allspice
1/2 tsp nutmeg
1/2 C. dried cranberries

They're velvety soft and kind of gooey in the middle, which reminds me of pumpkin pie.  These cookies are perfect.  Bake for 15 minutes - they burned at 18 minutes.

AH-MAZING

I have made these cookies for birthdays, parties, holidays,  and just for me and my husband to eat!  They are his FAVORITE cookies, and already my sister-in-law (who is a baker, and it has to be said, nowhere near vegan) hijacked the recipe and makes them now too!  These are like little mini cakes of joy and wonder, I think it's time for me to get cracking and make a batch soon!

These are so good. And mine have turned out like pumpkin bread but in a cookie form and i love it.
I didn't have any chocolate chips, so i added a little nutmeg and chopped almonds and it's sooo good.
I followed i_h8meat's advice and they turned out so moist and wonderful.

Scratch that.  Don't mash them down.  They were definitely better in the first batch.  Perhaps the muffin suggestion might be a better use for this?

I dunno about these.  I don't think I'm making them again.  I'm always jealous when everyone else seems to have a better result than I do.

I made these tonight.  I used half apple sauce & half shortening.  I added nutmeg, cloves, and allspice in addition to the cinnamon.  I used whole wheat pastry flour and added raw pumpkin seeds.  I used carob chips instead of chocolate.  I did not use an egg replacer since it had pumpkin and apple sauce already.

These were decent.  I would recomment mashing them down as my first batch did not spread what-so-ever.  I've got the second batch in the oven now. 

The batter was excellent eaten with a spoon!  :o)

I couldn't find pumpkin at my local grocery store, so I used canned sweet potato instead, and WOAH.  These cookies were damn good.  They came out super soft and chewy - just the way I like 'em.  I also doubled the amount of chocolate chips (because it seemed like the right thing to do).

A new favorite quick and easy recipe!
I used ENER G egg replacer and whole wheat pastry flour.  My oven had them done in like 18 minutes on 375.
LOVE them and they are seriously addicting so look out! ;)b

I tried these out last night. The bottoms burned terribly! I only had them in the oven for 10 minutes and the bottoms started smoking. I'm not sure what went wrong. The tops were cooked fine though. I wasn't too impressed with the taste of the cookies that weren't burnt. They were good in a subtle way but not amazing. I put a pecan in the middle of each cookie and the pecan was the best part. I put a ton of pumpkin pie spice in mine too and I barely tasted the pumpkin. I followed the recipe so I'm not sure what went wrong. I really wanted these to be awesome. Oh well, I'm glad they worked out for so many other people!
