Easy Pad Thai

What you need: 

1 package precooked or uncooked brown rice noodles or 'Thai Noodles'

5 Tbsp fresh lime juice

5 Tbsp soy sauce

5 Tbsp brown sugar

1 Tbsp peanut butter

1 glove garlic finelychopped 

Salted 'party' peanut nuts

1 Tbsp flour to thicken, if needed

1/3 cup cilantro and scallions for garnish

1 Tbsp canola oil

Veggies: (use your favorite)

Broccoli

Carrots

Edamame 

Baby bok choy

What you do: 

Depending on if you have precooked or not, cook noodles according to package

Heat canola oil in large sautee pan or wok - medium high heat. Add garlic 1-2 minutes. Add veggies. You can use frozen - they work perfectly. Let all veggies cook down. About 5-7 minutes.

As veggies are cooking, mix together lime, brown sugar and soy sauce. 

Add thai noodles to veggies then the lime mixture. Mix well. Reduce heat to medium and let cook for 5 minutes, stirring occasionally. Add peanut butter and nuts (as many or as little as you would like) making sure to mix well.  Reduce heat to low and let simmer for 3-5 minutes. Depending on thickness you might need to add the flour a lttle at a time. 

Plate and add cilantro and scallions - adds that extra freshness and great taste
