Easy Mojito Lime Tacos

What you need: 

3 tablespoons olive oil
1 (12-ounce) package vegan meatless crumbles
1/2 to 1 (1.06-ounce) package McCormick Grill Mates Mojito Lime Marinade*
1 tablespoon apple cider vinegar OR white vinegar
1 tablespoon water
1 (15-ounce) can vegetarian refried beans
2 tablespoons salsa (optional)
4 taco shells
vegan cheddar cheese, shredded, to taste
shredded lettuce, to taste
bell peppers, to taste (optional)
tomatoes, to taste (optional)
vegan sour cream, to taste (optional; e.g., Tofutti)

What you do: 

1. Heat oil in a pan. Add and mix together the crumbles, marinade, apple cider vinegar, and water; cook until crumbles are heated through.
2. In the microwave or on a stovetop, heat the refried beans in the microwave or in a pan. Mix in salsa in with them if the refried beans are too thick.
3. Fill taco shell with crumbles, then cheese, refried beans, lettuce, bell peppers, tomatoes, and sour cream on top. Repeat for remaining taco shells and ENJOY!
* If you don't want it to be salty, just add 1/2 the packet of marinade.
Seriously, this is the simplest recipe i have ever come up with. It's perfect for us college folk who don't have the time to make actual meals.
