Cinnamon-tastic TVP Taco "Meat"
1 cup TVP (textured vegetable protein)
5/8 cup boiling water
1/4 small red onion, roughly chopped
1 large clove garlic, minced or crushed
1/2 to 1 tablespoon sunflower or avocado oil
2 teaspoons cumin
1 teaspoon ground cinnamon
2 to 3 shakes ground white pepper
2 tablespoons cilantro leaves, chopped
1. Boil water in small pot. Once water is boiling, turn off burner and slowly stir in TVP. Let stand 5 to 10 minutes, or until water is completely absorbed.
2. Sauté onion and garlic in the oil over medium heat for about 2 minutes until onion is opaque and garlic is browning.
3. Stir TVP and spices in with garlic and onion and brown TVP for another 2 or 3 minutes.
I like to wrap it in a tortilla and top with chopped tomato, smashed avocado, mixed baby greens, salsa, and vegan Monterey Jack.

What's with the cinnamon (purely curious, no attitude)? The rest of the recipe sounds really good, definitely gonna try it soon, may even be brave enough to add a little...
