Dr. Pepper BBQ Seitan

What you need: 

1 cup vital wheat gluten
2 1/2 teaspoons garlic powder, divided
2 1/2 teaspoons onion powder, divided
2 teaspoon hot sauce (I like Tabasco)
3/4 cup vegetarian chicken broth (I like Imagine brand)
2 tablespoons creamy peanut butter
2 cups Dr. Pepper soda
1 cup ketchup
1/2 cup vegetable oil
2 teaspoons salt
1 teaspoon pepper
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
sprinkle sesame seeds, optional

What you do: 

1. Preheat oven 350 degrees Fahrenheit. Grease a cookie sheet, or line with parchment. Combine gluten, 1 1/2 teaspoon garlic powder, 1 1/2 teaspoons onion powder, hot sauce, broth, and peanut butter in a bowl.
2. Knead mixture for about 3 minutes to form a soft dough. It should be very slightly sticky and quite elastic. Press dough evenly on prepared cookie sheet. Shape however you like (I like free form nuggets, but you can cut strips, or fillets, whatever).
3. Transfer to oven and bake for 20 minutes. Meanwhile, combine the rest of the ingredients (except sesame seeds, don't forget the remaining 1 teaspoon garlic and onion powder) in a blender and process until smooth.
4. After 20 minutes, remove seitan from oven, and lightly spread with the sauce. Flip over and lightly spread the other side, too.
5. Sprinkle with sesame seeds, if desired. Put back in oven and bake for another 15 minutes. Remove from oven. Serve with plenty of sauce drizzled over it!
Source of recipe: Texas is famous for a lot of things. Dr. Pepper is one of them. This sauce is a favorite of mine, and every self respecting Texan should know how to make it. I wish I knew who to credit for it, but I think it's just one of those things you know how to make if you're Texan. Like queso or green sauce or frito pie. The seitan part of the recipe was adapted from The Complete Idiot's Guide to Vegan Cooking.

okay, I will try to find the original, - maybe I could order some... root beer, huh,- no idea what that is, sorry lol we do have sth that is called MAlzbier (maltbeer), which is a sweeter, dark, non-alcoholic type of beer, but I guess it's just not the same ...hmmm

almond extract is also not a regular over here, but we do have these intense aroma drops,... maybe I#ll try this ?

Woah. i can't believe someone compared Dr. Pepper to prune juice!  I would suggest just using regular coke. It won't be exactly the same, but the dark cola flavor will come close.  Cherry syrup might help. but I don't know by how much.

I don't know if you'll love it, but I LOVE IT. I think maybe it's a Texas thing. :)  And I really like the sauce :)

If the intense aroma drops aren't for food, I wouldn't use them. My boyfriend's mom makes Coke ham, and he says it's really good, so if you can't find root beer (or sasparilla is also like root beer I think) or cherry Coke or Dr. Pepper, I'd just use regular Coke. OR you could experiment and use the Malzbier, which sounds really interesting.

You could do some Coke with almond extract. I think that almond extract tastes like that fake cherry taste and kind of Dr. Pepper-y.

This is exactly what I was thinking.

Some say Dr. Pepper tastes like carbonated prune juice. Perhaps you could just use that! :D

thank you ! I know there used to be something like cherry coke available over here in the crazy '80s, I am not sure there's still any around, but that gives me a clue... I guess I could use regular coke with some cherry syrup, if my "sources" fail me ?

Dr Pepper flavor is somewhat more complex than that. Cherry coke might be a bit too sweet, and would certainly be missing some of the "mysterious 23 flavors". It might take a bit of experimentation to find the "best" flavor mix. Maybe some Coke, some root beer (a good quality strong brand), a little bit of really dark chocolate (to add some depth and complexity)? There's a bit of bitterness in Dr Pepper.

On the other hand, wikipedia does indicate (http://en.wikipedia.org/wiki/Dr_Pepper) that there is some worldwide Dr Pepper distribution, though you might have to hunt.

Dr. Pepper is a soda, kindda like cherry coke - do you know cherry coke? :)

oh, this is totally up my alley !
one prob for me though is, - I have no idea, what Dr. Pepper's is as we don't have it over here...

is there anything I could use instead (of course with absolute loss of flavour and quality ;o) )
