Cyprus Bulgur Pilaf

What you need: 

1/4 cup olive oil (less may be used, but is less authentic)
2 chopped onions
3 ounces broken vermicelli
2 cups bulgur (medium is best)
4 cups water
4 crumbled bouillon cubes
3 chopped fresh tomatoes
3 tablespoons tomato sauce
salt and pepper

What you do: 

In a large skillet, saute onions in oil till translucent.
Add vermicelli, and saute until golden brown.
Add remaining ingredients, and bring to a boil. Cover and reduce heat. Simmer for 20 minutes, stirring occasionally, until liquid is absorbed.
Serve with a variety of fresh chopped Veggies: cabbage, tomato, carrots, bell peppers, onions, etc, and of course, olives.
This needs no topping, but may be topped with plain soy yogurt or tahini sauce if desired.
This is traditional Cyprus comfort food -sort of counterpart to American Mac&Chees, but healthier!
