Curried Gazpacho

What you need: 

2 cups low sodium V-8
3 plum tomatoes, finely diced (or 2 cups diced tomatoes - the riper the better)
1/2 sweet onion, finely diced
1 cucumber, finely diced
2 tablespoon balsamic vinegar
2 teaspoon curry powder
2 teaspoon good olive oil
salt and pepper to taste
Tabasco/hot sauce to taste

What you do: 

Place V-8, 1/2 of tomatoes, onions and cucumber, all of balsamic and curry into food processor/blender and process until smooth. Add the remaining diced veggies, hot/hot sauce, salt and pepper to taste, and chill.
Depending on what is in season, I will add green or red pepper, sweet corn, etc. as I wish. Play around with it. Also, you could use either a sweet or hot curry. Either way, it adds a new dimension to gazpacho that makes my taste buds happy!
