Refreshing Gazpacho
6 inches sweet (*not sourdough*) french baguette, crust removed, torn into pieces
1 large cucumber, seeded, peeled, cut into small chunks
5 roma tomatoes, seeded, cut into small chunks
1 large red bell pepper, seeded, cut into small chunks
1/2 small onion, cut into small chunks
1 clove garlic
1/4 cup water
1 1/2 tablespoon white vinegar
2 tablespoon extra-virgin olive oil
salt to taste
Soak vegan bread pieces in water for about 1 minute. Remove but do not squeeze water out. Place in blender with 1/4 cup water and cucumber. Blend on high until pureed. Slowly add the rest of the ingredients making sure they are well blended. Finish with oil, vinegar and salt. Consistency will be a liquidy puree. Pour into pitcher or large bowl and chill. Stir before serving. Serve in glasses or in soup bowls garnishe'd with a sprig of cilantro.
