Coffee Cooler

What you need: 

1 tablespoon instant coffee
1 tablespoon sweetener, or to taste
1 tablespoon cocoa (optional)
1 teaspoon vanilla or almond extract
12 ice cubes
1/2 cup water or soymilk

What you do: 

1) In blender mix coffee, sweetener, cocoa, and extract with ice. Add water or soymilk as necessary to form a smooth mixture. You can make it thick or thinner according to preferences. It should whip up frothy and smooth. Its perfect for a mid-day pick-me-up especially on a hot day.

I made this with coffee made up and let cool slightly, ice cubes, and some vanilla soydream since i was out of soymilk.  It was really really good!

oh yay!! this is right up my ally. i'm a barista in a swanky little wine bar/coffeehouse. we do make ALOT of blended drinks. just a word to the wise, you may not want to add all water. i find it works best with soy or rice milk (or regular milk if you're doin' it that way). using the same amout of ice to liquid works well too, or just SLIGHTLY more liquid to get the blender goin'. it also works to use chilled coffee or espresso, we keep chilled espresso on hand for just the occation, but that might not happen in just your regular home (i don't know many people who keep chilled espresso in their fridge)so even just regular chilled coffee is cool. as for taste, it's up to you. some people don't like sweetener while others love extra chocolate syrup and vanilla. honey works well, if you choose to eat honey. some people prefer that it isn't blended. just play with it.

Mm mm! A must for coffee lovers! Finally a substitute for all those coolers at the coffee shops! So smooth and creamy! Yum! :) I'm burning out my blender on this one! Hate to say it, though, but I do add more sweetener.

this would be tastier with a frozen banana instead of those ice cubes

Not very tasty... I'll stick with banana smoothies, I think.  If you make it, make sure you add the vanilla and probably some extra sugar if you put in the cocoa...

Side note:  If you're putting in ice, do NOT try to mix it with an immersion blender... just use a blender.  What a mess.
