Coconut Flour Pancakes

What you need: 

1/3 cup coconut flour
2/3 cup whole wheat pastry flour
2 teaspoons baking powder
3 teaspoons Ener-G egg replacer
1 tablespoon vegan sugar
2 cups soymilk
vegan soy butter and vegan syrup to top with

What you do: 

So good, so filling, I seriously could NOT stop my cat from stealing a piece!
1) Heat a non-stick pan.
2) Mix dry ingredients until well combined.
3) Add soymilk gradually; you may not need all 2 cups. Mix well.
4) Make sure pan is hot enough, then spoon batter onto pan.
5) Remove from pan when golden brown (i like 'em dark-ish). Top with vegan soy butter & warm syrup. Enjoy!
