Cinnamon-Apple Waffles
3 egg replacers (I used 4 1/2 teaspoons Ener G + 6 tablespoons water)
1 cup nondairy milk (I use soy)
1/3 to 1/2 cup oil (canola is best)
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon cinnamon
1 large apple, peeled and shredded
1. Preheat waffle maker according to manufacturer's directions. Beat egg replacer and water in bowl until thick. Beat milk and oil into egg replacer. Add vanilla.
2. In a separate bowl, combine remaining ingredients except the apple. Sift into egg mixture and mix well. Stir in grated apple.
3. In waffle maker, spread about 1 cup batter over the bottom heating plates, or enough to completely cover the surface. Normal cooking time will be 3-6 minutes for each waffle. It's best to check the directions that come with your waffle maker.

Fantastic! ;)b i used banana to replace the eggs and applesauce to replace the oil and they turned out great. fluffy and delicous! Probably the best waffles i have ever had. I think i will make these for my meat eater family when i see them in March. :)
I just made these and they are really good. I used a banana and a half instead of egg replacer and used applesauce instead of oil. I also used Oat milk instead of soy. The grated apples are a nice touch. This made 7 of the round waffles for me. I froze them so I could have them all week. :bunny:
great. i used prunes as egg-replacement and i didnt use apples so it tasted different than yours, but it was really good.
These were really good! A good way to use up those apples I had in the fridge!
Do they freeze well?
Thanks for the recipe...these were delicious! We topped them off with chopped walnuts and maple syrup. We also used a little less flour than was called for.
This was fabulous!! Although, I halved the recipe. I used Wonderslim as an egg replacer, rice milk, sea salt. I also used the suggestions and added a little extra sugar and vanilla. I ended up needing exta milk and 1/2 cup oil for the right consistency. I didn't use the apples or cinnamon, but I will next time. **** I also tried adding rice protein powder to the second half of the batter (with little exta milk) and this actually tasted pretty good, despite the fact that I hate my protein powder!
