Chunky Peanut Butter Cookies
What you need:
1-1/2 cups flour
1 cup chunky peanut butter (Teddie's Super Chunky is best)
3/4 cups sugar
1/4 cup melted vegan margarine
1 teaspoon vanilla
1/2 teaspoon baking powder
1 to 2 tablespoon of vegetable oil
What you do:
1. In a bowl, thorougly combine all ingredients except for the oil (flour, peanut butter, sugar, vegan margarine, vanilla, and baking powder).
2. Add the oil as needed to get a dough-like consistency.
3. Roll the dough to create 2" balls and place on un-greased cookie sheet.
4. Bake at 400 degrees F for 10 to 12 minutes.

SO HOW'D IT GO?
This is really yummy, but need more oil to "glue" it together. Best non gluten bikkike I ever made using non gluten flour. :)
I was so excited for these because...um, well...I'm a cookie addict, and this scrum-dilly-umptious recipe had awesome ratings. :) However, these are probably the worst cookies I've ever made. I followed the recipe: The taste was good (who wouldn't love a little sugar and peanut butter?), and the dough had a great consistency. However, once out of the oven, these disintegrated into dust. These were by no means your average crumbly cookies; these turned into mini heaps of sand when touched or jarred slightly. Way, way too dry! I recommend using much less flour, a touch more sugar, a dash of salt, and perhaps even some dairy-free milk to both improve the taste and consistency immensely. Or, just find another recipe.
I'm sorry; I really hate giving bad reviews. This was a great attempt at a great cookie, but I can't recommend it. Hopefully others have better luck!

These are highly addictive and delicious - wisely, I doubled the recipe, but still, they didn't last very long. I will have to be restrained so I won't adopt a diet of just these cookies ... help...
