Chickpea Salad Sandwich
2 slices whole wheat bread
chickpeas
mustard
soy mayonnaise
pickle relish
vegan soy cheese, optional
lettuce, optional- i like the spring greens mix
tomato slices, optional
fresh ground pepper
When I became vegetarian, i missed the weirdest things, and one of those things was chicken and tuna salad sandwiches. This is a good substitute, because with the mustard, mayonnaise, and relish, you can hardly tell what the main ingredient is anyway. Non-vegetarians will like it too!
Put the chickpeas, mustard, mayonnaise, and pickle relish (or whatever you would typically make meat salads with) in a bowl and mash with a fork into a lumpy consistency (should have texture, not smooth like hummous). Put cheese on one slice of vegan bread spoon chickpea salad over it. Top with lettuce and tomato slices and add pepper to taste. Put other slice of bread on top to close sandwich and slice in half from corner to corner. Yummy... enjoy! ;)

this is pretty darn good. a samich i could get into. the way i made it was w/chickpeas and black beans, using veganaise (the grapeseed one), spicy mustard, and shredded carrots. i dont like celery so i'm going to figure out other veggies to put in the spread. i'll probably get huge lettuce leaves to put on, and i might mix it with my amazing avocado spread. thanks for sharing!!! this is cheap and easy!
I always hated mayo (even vegan mayo), so I skipped that and replaced it with a bit of tahini and added extra mustard and relish. Yum!
Yumm. This is a staple in my house. I make mine with veganaise, a little hot sauce (tapatio preferably), pickles, and then stuff it into one of my dad's famous home-made pitas. *drool*
I think I'm going to have to make it for lunch today.
;)b This recipe is so good, I used dry chickpeas and just followed the directions on the package...let them soak overnight, and then cooked them for 2 1/2 hours...they were soft, and easy to "mush" up...I added a chopped onion, relish, and soy mayo, and like someone else suggested..celery salt....it was awesome...it made alot, so i'll be eating this all week :)>>>

This was super yummy! I used lemon veganaise because I love the tang of it. I made enough to eat it a couple times for lunch during the week, and didn't get bored ;)b
I bet this would be great stuffed in a tomato. Has anyone tried that yet?
Love this recipe, it's inexpensive, easy to make and is perfect for a sandwich or on a salad. I felt like there was something missing so I added red grapes sliced in half, adding to the textures and because I love mixing sweet and savory. I also sometimes add curry powder to it, rather than mustard.
This is yummy! It's a great alternative to tofu salad.
I add chopped celery, onion, and shredded carrot to the chickpea mash. I also add some kelp, a bit of garlic powder (just a touch), s&p, and some paprika. I omit the mustard.
So easy. So good. Definitely worth trying. You'll become addicted.
This recipe grew on me. I didn't really like the first sandwich of the batch, but I ended up making some alterations and changing my mind. First of all, I think that TVP "tuna" is more tuna-like than this recipe, but chickpeas are a bit easier to come by as a protein source. I add a lot of finely diced onion to mine, as well as garlic salt and paprika. I wish I had dill as that would make it perfect. Anyways, I think it's a bit too dry if you eat it in a normal sandwich, so I've taken to making open-faced sandwiches with these, using just the one piece of bread and some lettuce. A good quick lunch, thanks!
I like mashing my chickpeas with a potato masher(ol fashion style) your still gonna have lumps. But yeah the recipe rocks. Chickpea lover here :)>>>
