Broiled Tomato Sandwich

What you need: 

2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 ripe tomatoes, thickly sliced
3 tablespoons vegan mayonnaise (Grapeseed Oil Vegenaise)
1/2 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 garlic salt
4 slices bread, lightly toasted

What you do: 

1) Preheat oven to broil.
2) In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
3) Meanwhile, in a small bowl, combine vegan mayonnaise, parsley, garlic powder, oregano, & black pepper. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 4 slices and sprinkle with garlic salt.
4) Place on a baking sheet and broil for 4-5 minutes. Serve immediately, open faced.

These are amazing.  My husband likes most of what I cook, but he seldom RAVES about the food.  This dish he couldn't stop talking about in between bites.  However, he talked so much that his last piece got cold, and he didn't care for this cold.    We are lacto, so I did put some parmesan on the top, and it was fantastic.  I don't really measure the herbs anymore, I just randomly throw things in that sound good!!!  :)  REALLY fantastic. :)


I am eating this right now - it is so good I couldn't wait to finish eating to tell you how great it is!
Thanks for the recipe! Next time (quite possibly tomorrow) I'm going to try melting some soy cheese on it.


Tastes great! Instead of parsley and oregano I used Mrs. Dash's Southwest Chipotle for a little kick. I'll be melting some swiss over them next time.


Delicious!  Even better with a little swiss (soy or otherwise)  melted on top.
