Chewy Chocolate Chip Jumbles
1 tablespoon ground flaxseed
3 tablespoon water
1 cup all-purpose flour
1 cup quick oats
1/2 cup bran flakes
1/3 cup firmly packed brown sugar
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup unsweetened applesauce
1/4 cup vegan margarine, softened
1/2 teaspoon vanilla extract
1/2 cup vegan chocolate chips
1, Preheat oven to 350 degrees F. Warm your cookies sheets on top of the oven. Spray with nonstick spray. In a small bowl, combine ground flaxseed with water and let sit or microwave for 15 seconds.
2, Place the following ingredients in the bowl of a food processor: flour, oats, bran flakes, brown sugar, granulated sugar, baking powder, and baking soda. Blend until the bran flakes and oats are broken up to your desired consistency. I like mine to be blended well but with some texture so that my cookies have a nice chewy texture.
3. Add the applesauce, margarine, and vanilla extract. Mix with a spatula. Add the chocolate chips and mix thoroughly.
4. Drop by the tablespoonful onto the cookie sheets. It doesn't seems like much but the cookies puff up. They aren't round cookies but are more like cookie jumbles. Space them about 1 inch apart.
Bake for about 10 minutes and cool on wire racks.

SO HOW'D IT GO?
Man, it took me so long to figure out how to reply because I can't edit my recipe. I had a couple of these cookies today and some remembered that I forgot to put up the calorie count on these babies. Using the generic ingredients that I did, each cookie worked out to just under 100 calories each.(98.something or other calories) Also, these cookie seem like they would be super with some cinnamon and I've noticed that they get better with time, if you give them any unlike myself.
