Cashew-Jalapeno Chutney

What you need: 

1 cup raw cashews
1/2 inch piece of ginger, chopped
1-2 jalapenos, seeded, stemmed and chopped
1 teaspoon salt
1/4 teaspoon lemon juice
1/3 cup water (divided)
2 tablespoons cilantro or parsley (chopped)

What you do: 

Place first five ingredients and half of the water into a food processor. Process until good and chopped.
Add the rest of the water, and process again, to desired smoothness.
Transfer to a bowl and stir in the chopped cilantro or parsley.
Spread onto some sort of bread product and enjoy!
Warning: This stuff is mighty addictive.
