Cashew-Jalapeno Chutney
What you need:
1 cup raw cashews
1/2 inch piece of ginger, chopped
1-2 jalapenos, seeded, stemmed and chopped
1 teaspoon salt
1/4 teaspoon lemon juice
1/3 cup water (divided)
2 tablespoons cilantro or parsley (chopped)
What you do:
Place first five ingredients and half of the water into a food processor. Process until good and chopped.
Add the rest of the water, and process again, to desired smoothness.
Transfer to a bowl and stir in the chopped cilantro or parsley.
Spread onto some sort of bread product and enjoy!
Warning: This stuff is mighty addictive.

This was so freakin' good! I forgot to add the cilantro, but I didn't miss it. It was perfect on a spinach wrap with some sliced fresh tomatoes and romaine lettuce. I would recommend doubling the recipe though...because you are going to want to snack on this with some crackers after your dinner. Its hard to imagine going back to icky deli meat when there are creative sandwich spreads like this out there!
Definately addictive. I could eat a mixing bowl full all by myself.
Very very good, but next time I will add an extra jalapeno.
Mmmm, this is so good. Although for future reference I might use more jalapenos or a hotter chili (I like my food to be really painful). I think a bit more lemon juice wouldn't hurt either. But overall, it's super good. Can't wait to have it with dinner tonight on homemade ciabatta. ;)b
Mmm...tasty. I was tempted to devour this by the spoonful, but feared fire damage.
I made this recipe using a crystalized ginger spread because I didn't have fresh ginger. It gave the recipe an interesting sweetness (because there is sugar in it), but still maintained the heat. I would recommend this to anybody that loves hot food, but it should definitely come with a a warning label : ) I had to eat some cold carrots in between each bite! An awesome, interesting recipe that I plan to make again.

Tomato, huh? Now that sounds interesting. I had really never considered it.
I'm making this tonight for a friend who has a love/hate relationship with this dip. She LOVES the taste, but doesn't do heat of any sort very well. So there she is, sweating, guzzling water and saying, "But I HAVE to have some more..." Maybe some tomato will ease the sting for her.
