Carrot Soup

What you need: 

1 bag baby carrots
1 cup vegetable stock
garlic and onions, howe'ver much you like
1/4 cup orange juice
some soy milk (just a little to adjust thickness at the end)

What you do: 

Saute the onions and garlic in a little bit of olive oil, until soft. Throw in the whole bag of carrots and add veggie stock. Simmer until carrots are soft. Add orange juice for a few minutes. Pull out the blender, throw it all in, just watch the amount of liquid, (depending on how thick or watery you want it.) Puree until smooth. I always keep it thick, put it back in the saucepan, and add about 1/4 cup of soy milk. Serve with grilled pita..... or not. :-)

SO HOW'D IT GO?

this was delicious!! and I was surprised how much the orange juice helped with the taste :) I had some left over pumpkin, so I added a tad bit which also helped bring out the sweetness. WIll definetly make again!

This came out much better than I had expected for such a simple recipe.  I used half a bag of carrots and kept everything else the same, I had to add exra broth in the blender along with pepper. So simple, easy and yummy I will def make again.
