Carrot Cookies
What you need:
1 tablespoon vegan margarine
2 tablespoons vegan sugar (+a little for sprinkling)
4 tablespoons grated carrot
2 drops vanilla, optional
6 tablespoons self rising flour or 4 tablespoon all purpose flour + 1/2 teaspoon baking powder
What you do:
1. Preheat oven to 350 degrees F. Cream the sugar and margarine.
2. Beat in the carrot and vanilla, if desired. Fold in the flour.
3. Make into small balls, place on a baking tray, and flatten. Sprinkle the tops with sugar.
4. Bake in the oven for 20 minutes.

SO HOW'D IT GO?
I made these a couple of weeks ago to satisfy a carrot cake craving, and they're really wicked good. My fiance's been asking for them since, so we just made them again tonight. They'll definitely become a standard at our house.
The first time I used oil instead of margarine and maple syrup in place of the sugar. That provided enough moisture for the dough to stick together perfectly. The second time we used brown sugar, and then had to add some water to get it all to stick right. They still came out well. Oh, and no need to sprinkle sugar on top. I haven't remembered yet, and haven't missed it. We bake them at 350 for about 20 minutes.
