1 tablespoon vegan margarine
2 tablespoons vegan sugar (+a little for sprinkling)
4 tablespoons grated carrot
2 drops vanilla, optional
6 tablespoons self rising flour or 4 tablespoon all purpose flour + 1/2 teaspoon baking powder
1. Preheat oven to 350 degrees F. Cream the sugar and margarine.
2. Beat in the carrot and vanilla, if desired. Fold in the flour.
3. Make into small balls, place on a baking tray, and flatten. Sprinkle the tops with sugar.
4. Bake in the oven for 20 minutes.
