Black Beans, Corn, and Tomatoes

What you need: 

1 15 oz can black beans
1 can diced tomatoes (can substitute fresh tomatoes)
1 can corn or 1 cup fresh or frozen corn
1 teaspoon parsley
1 teaspoon chili powder
1 clove garlic
1/8 teaspoon cayenne pepper, optional
2 small cans mushroom bits, optional
1 teaspoon basil, optional

What you do: 

To prepare as a salad, drain and rinse beans. In a bowl, combine beans, corn, tomatoes and garlic. Add parsley, pepper and chili powder. Combine and serve.
To prepare as a main dish, combine beans, corn, tomatoes in slow cooker or skillet. Add spices. Add mushrooms. Add rice and water (amount of water according to rice recipe).

SO HOW'D IT GO?

I made this as a main dish last night, and it was very easy to make. The instructions are a little lacking, so basically what I did was cook my rice first, then mix the rest of the ingredients in a skillet, and bring it to a good simmer for about 5 - 10 minutes. Then I added the rice, and let it simmer for another 5 minutes.

My husband found it to be lacking a little in taste, and he added crushed red pepper to his. Next time I make it, I plan to add that to the ingredients as it's cooking. Overall, though, I think it was a very good and easy recipe to make!

perfect!  this is exactly what i was looking for.  i was sitting here with a bowl of black beans, corn and tomatoes trying to find what spices i should add to it and this was perfect.  i also added bacon bits and a splash of olive oil.  mmmm.

Simple and delicious! I chilled this, added some red onion slices, and dressed with olive oil and lemon. The longer it chills the better it is. A light but filling dish for summer.
