Best Tasting Pancakes Ever! Vegan or Otherwise
What you need:
1 teaspoon vanilla
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup nondairy milk (I use soy)
2 tablespoons vegetable oil
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
What you do:
1. Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl.
2. Pour wet ingredients into dry; mix well until smooth consistency.
3. Drop ladlesful onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.'

My family and I love pancakes for dinner. I just made these using the egg substitute of 2 tsp baking powder & 2Tbsp warm water because I didn't have any bananas. It didn't work AT ALL! My 2 & 4 year old children even left their plates on the table full of cut-up pancakes. I tasted only baking powder, even after mixing the wet ingredients very well. I'm glad others enjoyed this recipe, but I'll just stick to the one that has worked for us.
This was probably your mistake. This is why I get annoyed at recipes that say "egg replacer" rather than specifying exactly what works. If you want to give these another go, try it with 1 TB of finely ground flax seed, mixed with 3 TB of hot water, whipped up well in the blender along with the rest of the liquid ingredients. They'll come out high and light and perfect.
I used 1 heaping TB of flax seed, along with 3 TB hot water for the egg replacer. I also bumped up the vanilla extract to 1 TB. It came out perfectly, and took no time at all to whip up.

These were great! I didn't have vanilla, so this is what I changed: only two tablespoons of sugar, plus one tablespoon of honey, and come cinnamon. I had them with some Earth Balance and blackberry jam, and they were perfect!
I made these for the volunteers at the animal sanctuary I help at and everyone loved them..they want ore asap lol.
This was super yummy. The only thing I did was add strawberries and bananas into the batter and topped it with blueberry syrup.....sooooo good
Thanks for the recipe. Such good pancakes. I used Ener G egg replacer. I subbed applesauce for the oil, and used half whole wheat flour. Also good with blueberries in them.
I've made these 100 times and they are so great :) I use Ener-G egg replacer and they turn out great every time.
Not that this recipe needs another review but we loved it! I tripled it and used a whole banana for each egg so they were kind of like banana pancakes but that was a good thing. I was cooking for about 15 people over half of which were kids and everyone raved. Thanks so much. Since being vegan pancakes has been something that I have had the hardest time getting to work out.
amazingly fluffy and tasty pancakes! my boyfriend was amazed. we used applesauce in place of oil, a whole banana as egg replacer, brown sugar and a tablespoon of extra flour because the orignal batter was really liquidy.
we didn't have vanilla but cinnamon was great as a little addition, and we put blueberries in the batter too!
we'll definitely make these again! :)
