The Best Real Peanut Butter Cookies!

What you need: 

1 1/4 cups firmly packed light brown sugar
3/4 cup smooth peanut butter (I use Smart Balance)
1/4 cup vegan butter (I use Smart Balance light)
1/4 cup vegetable shortening
1 heaping tablespoon unsweetened applesauce
1 3/4 cups unbleached all-purpose flour
2 tablespoons vanilla
3/4 teaspoon baking soda
3/4 teaspoon salt

What you do: 

1. Preheat oven to 375 degrees F. Mix your brown sugar, peanut butter, margarine, and shortening in a large mixing bowl either by hand or with an electric mixer, until smooth.
2. Add in the applesauce, and mix again. Next, put in flour, vanilla, baking soda and salt. Mix until well blended.
3. Take a rounded teaspoon and spoon onto a cookie sheet (I put wax paper over what I am cooking on) and use a fork, pressing once on each side of the cookie to get the nice fork lines in it.
4. Bake for 8 to 10 minutes, depending on your oven. Be careful not to overbake. It is important to let them cool for several minutes before attempting to take off of the sheet, it gives them time to harden.

Source of recipe: I have tried many vegan peanut butter cookies and have not been satisfied. I finally made my own recipe after having a huge craving for them, and came out with this one, which tastes wonderful. I hope you all like it as much as I did!

SO HOW'D IT GO?

Seriously! These are THE BEST peanut butter cookies! They are nice and moist and chewy but still beautifully crisp! This recipe has a permanent place in my recipe box!!

OH WOW! I made these randomly a few hours ago and they are amazing. I actually had to run to the store to get some vanilla but it was well worth it. Instead of the half vegan butter and half shortening, I put 1 stick of Nocua non-burn margarine. I put wax paper down but forgot to spray it with cooking spray so there's wax on the cookies! They are still amazing though and they are my new favorite cookie recipe.

I've been looking for the perfect peanut butter cookie recipe and this is definitely it!  I added a little more peanut butter and flour, just cause I love peanut butter.  Baked mine for 8 minutes exactly and let them cool for a while before taking off the cookie sheet.  They are moist, chewy and delicious!!

Was GRRREAT I made some simple changes didn’t have some items on hand
**used ½ cup of extra virgin coconut oil (soften w/ mixer before hand )
**1 3/4 cups of Whole grain pastry flour
**½ med sized banana cubed (about the size of chocolate chips)**Addition for added flavor
**Added 4 Brazilian nuts roughly chopped 

As well made a sauce for the tops;
-1 medium banana mushed up (used a fork)
-2 tablespoons of smooth peanut butter
-2 tablespoons of Light brown sugar
-2 tsp of unsweetened coconut
Mix well and spoon a dollop on top of cookies mmmmmmm  :D

Great Recipe!
I used molasses instead of brown sugar, and soy lecithin in place of apple sauce 8-)
Nevertheless, they were easily devoured by me and my near-toothless chomping device >:D

These were the best p.b cookies.  I brought them to work and they disappeared within minutes.  One co-worker said "who needs Mrs Fields when we have you".  Thanks for the recipe.

These were the best P.B. cookies I have had fora very long time! Thanks for the recipe. Me and my kids loved them and I'm sure my hubby will too (he loves anything with peanut butter).

This are fantastic!  I used half whole wheat flour and less sugar in mine, because I like the peanut butter taste to stand out more than the sweetness.  Omni husband approved!

these are really really good, they satisfied my craving. i subbed white sugar for brown sugar, didn't use applesauce, and used all butter instead of half shortening
