Basic Soy-free Scones

What you need: 

2 cups whole wheat pastry flour
1 cup rolled oats
2 teaspoon baking powder
1 cup coconut milk
1/4 cup melted Earth Balance (or oil)
1 teaspoon vanilla
3 tablespoons sugar (or sweetener of choice)
1/2 teaspoon salt
1/2 cup dried fruit if desired
1 teaspoon cinnamon if desired
granulated sugar for topping if desired

What you do:

Preheat oven to 450F.
Mix the wet ingredients plus the sugar. In a separate bowl.
Mix the flour, oats, baking powder and salt (and cinnamon if using any).
Mix together the wet and dry ingredients. If using any fruit, add it now.
Shape into small balls rolled in granulated sugar (mini scones), or in one large sphere, flattened and scored into wedges.
Bake around 15 minutes (depending on size maybe more) or until just beginning to brown.
*Note: do not use lite coconut milk

SO HOW'D IT GO?

Earth balance now has a soy-free product! :)

Earth Balance has soy oil in it, so if you want these to be really soyfree, use oil.
