Berry Scones
1 3/4 cups all purpose flour
3/4 cups quick oats
1/2 teaspoon baking soda
2 teaspoon baking powder
dash of salt
3/4 cup sugar
1/2 cup vegan margarine
2 tablespoon lemon juice
1/2 cup soy or rice milk
1 cup fresh or frozen berries (frozen works best)
This is a recipe that used to be here on VegWeb but it is no longer here (lost in the shuffle, perhaps?). This recipe is just too good to be lost!
Preheat oven to 400ºF. Lightly grease cookie sheet.
In a large bowl, combine flour, oats, baking soda, baking powder and a dash of salt. Add in sugar, margarine (softened), lemon juice, and soymilk. Mix until just combined.
Stir in berries last and gently mix. Do not over mix!
Drop dough onto cookie sheet and bake 10-15 minutes, or until lightly browned on top.
SO HOW'D IT GO?
I made this yesterday, and mine came out fantastic! I used whole wheat pastry flour, replaced the oil with apple sauce, cut back the sugar to 1/2 cup, and used frozen raspberries. I used a half cup measure to portion out into 6 large scones. They took a little longer than 15 minutes, but came out light, fluffy, sweet and tart. These will definitely become a breakfast staple for me.
I made these the other day and was a bit disappointed. The dough was super runny (I think because the frozen berries were melting) and there was no way it wasn't going to burn in the stove, so I added more oatmeal and flour to thicken it until I got the consistency of scone dough that has turned out well in the past, but they still didn't turn out that well. I'll keep looking for another berry scone recipe!
I actually just made these. I thought they tasted...ok, maybe its just because this was my first time making them. I'm not sure if I'll give this recipe another try. :-\
