Banana Nut Bread
What you need:
3 ripe bananas, mashed
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts, coarsely chopped
What you do:
1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl.
2. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts.
3. Pour the well blended batter into the greased pan and bake for 1 hour. Remove and let cool.
I found this recipe works better than many I've tried, since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice, however olive oil is the healthiest!

This is a decent "base" recipe that will need some tweaking. The recipe as is -- with dry sweetener -- is far too dry to go into the oven. You will either need to use a liquid sweetener to replace the dry sugar or use dry sugar + almost 1/2 cup soymilk.
Also, the baking time seems a bit long. I baked for about 50 minutes and the crust that formed was still a bit too hard for my liking.
The texture on the inside is soft, moist and chewy. I did not understand how some reviewers said that it was too sweet... banana bread is *supposed to be sweet* and dry sugar adds moistness to baked goods. Decreasing sugar will produce a drier bread. Actually, I thought the addition of some tropical source chocolate chips would be spot on.. it certainly needs a little more flavor and next time I will be sure to add at least vanilla.
Don't get me wrong -- this is delicious bread (and very healthy)! I am just very picky and am searching for a recipe that can hold a candle to my old one :)
I added chopped pecans as that was what I had.. if you omit the nuts, be sure to add 2 tablespoons of flour to recipe to make up for the deleted volume (general rule).
OMG, this is sooo good! This is the first recipe I've made from this website and the first vegan baking that I've tried. I had 2 bananas that were getting a little mush so I decided to try to throw this together while I was cooking dinner last night. I expected nothing from it since I didn't really measure and I didn't really do the math to scale down the recipe for 2 bananas. I just guessitmated it all and it turned out awesome! I made muffins instead of a loaf, used a little vanilla, and no nuts. Perfect.
SO GOOD :) I modified it a bit ('cause it's such a great basic recipe to mod): as suggested earlier, I added 1/2 cup sugar then I added dried currents, coconut and nutmeg. I used 1 cup AP flour, 1/2c WW flour and 1/2c oatmeal. I added just a splash of soy milk, enough to get it to come together. On the top before baking I sprinkled more coconut with cinnamon and some random granola I found in my cupboard. I'm glad with how great it rose as well. MMMmmmm, so good and hearty. Thanks for the recipe, I'll be making this again.

Forgot to mention, reduced the sugar to 1/2 cup and it was PERFECT! Any more sugar, and it would have been too sweet and not like traditional banana bread. :)
Awesome!!!!! I used white whole wheat flour, and added 1/2 cup of applesauce and it tastes just like, if not BETTER, than the banana bread I grew up eating! I will make this again and again! ;)b
I managed to mess this up :(
I misread the ingredients, and put in baking powder instead of baking soda, but then had to leave before the bread was done baking, so I turned off the oven about 35 minutes in. I baked it for another 20 minutes when I got back, but it's dense not that good. I also didn't have any walnuts. Maybe it'll be better toasted.
Great, easy recipe. With the addition of applesauce to make the batter more moist this bread turned out excellent. I also reduced the sugar to 1/2 cup, added some ground flax seed, and used a 1/2 cup of spelt flour and the rest regular white flour. My sister loves it!
This is yummy..
Instead of flour I used two cups of oat flour ( grind up oatmeal in a coffee grinder or a magic bullet) I also added about a tsp or more of ground flax seeds and only used half the sugar the recipe called for. I figured the banannas would make it sweet on it's on. I made these into muffins instead of bread and it made about 10 muffins.
Honestly I chose this recipe cuz It was short and I had everything on hand, but I just got done making it and honestly it is fantastic. I did use the two cups of flour and I also threw in some applesauce for good measure, and it tastes like what my mom used to make! Its great. I topped it with the Banana Frosting (glaze) in this site and its delish! Happy cooking!
