Banana Nut Bread

What you need: 

3 ripe bananas, mashed
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup walnuts, coarsely chopped

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl.
2. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts.
3. Pour the well blended batter into the greased pan and bake for 1 hour. Remove and let cool.
I found this recipe works better than many I've tried, since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice, however olive oil is the healthiest!

SO HOW'D IT GO?

this is a very easy and delicious recipe!  The bread was just a bit more dry/crumbly than most other banana breads I've made, but it certainly wasn't a bad thing.  I used canola instead of olive oil, and since I was just short of 1/2 cup of nuts, I threw in a handful of dried cranberries....it was a most excellent addition.

This banana bread is probably the best I have ever had. It is super easy to make and comes out delicious every time.

I made this banana bread and my brother who routinely mocks my vegan food admitted that not only was this really really good but he might even like it better than my mother's banana bread. :o

SO GOOD! I added a spash of vanilla and a few dashes of cinnamon(sprinkled on top too) and instead of just sugar i did about half raw sugar and half maple syrup and i added an extra banana and substituted 3/4 cups of the flour(I used whole wheat flour) for about a cup of oats and i also used much more nuts(triple). It came out so hearty and tasty! Also, i greased the pan with an olive oil spray, but i did a quick spray over the top too, and it made slightly crispy on top! I loved it.

This banana bread was great. I made it to take canoing today.....and it is gone. I followed all of the previously mentioned suggestions. 1/2 cup less flour, 1/2 cup sugar, 1 tsp salt, 1/2 cup applesauce, flax seed, cinnamon. I used 100% whole wheat bakery flour. The bread was moist, sweet, and delicious. We broke off pieces straight from the loaf. I meant to take a picture, but I wasn't sure that me eating from the loaf would be an appetizing photo for you all.

good! i only used 1 tsp salt though because of the comments here. but it is delicious. watch for cooking time though. mine was done in 40 mins. 20 minutes early. but our stove is notorious for that so use your nose. but this is very very moist and tasty. my non-vegan family loved it. i know i will make it again. even a sister who doesn't very much like bananas or nuts agreed it was good.  :)

Great recipe!  I replaced the salt with a few squirts of braggs (strange, I know), added a few teaspoons of vanilla, and took out 3/4ths a cup of flour and replaced it with 3/4s cup of steel cut oats.  I also upped the olive oil by a bit because I like my bread nice and moist.  It came out incredible.  The oats gave it that extra crunch, and I could not taste the broth flavor of the braggs at all.  Sweeeeet.

I like the flavor of this bread, but I'm pretty sure the texture didn't turn out. I baked mine in a convection oven, and adjusted the settings, but is it normally this... breadlike? The banana bread I grew up with always has a muffin texture.

Meh, wasn't really a fan. I added vanilla and cinnamon and there still wasn't enough flavour - a bit disappointing.

this is a great recipe! i especially love the small amount of ingredients.. the bread turned out very moist. i was using small bananas so i added an extra, otherwise it would've been too dry. i also reduced the salt to 1 tsp. i found the bread to be quite sweet, which i like. however, those looking for less sweetness may want to cut back the amount of sugar.
