Applesauce Ginger Cookies

What you need: 

3/4 cup flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1/8 teaspoon salt
1/4 cup granola or oats
1/4 cup margarine
3/4 cup apple sauce
1 teaspoon cinnamon
1/4 cup sugar
1/4 cup brown sugar
fresh ginger to taste
1/4 cup candied ginger.

What you do: 

Preheat oven to 375.
Mix first 5 dry ingredients.
In a separate bowl, melt margarine and combine with apple sauce, sugar, and cinnamon. Add to dry ingredients.
Grate ginger into the dough (more for spicier cookies). Chop candied ginger into small cubes and add to dough. I like the uncrystalized kind.
Place heaping spoonfuls on a baking sheet. These are pretty sticky, so I recommend greasing the baking sheet or using parchment paper.
Bake for 15 minutes, or until the color darkens. Let cool before removing from baking sheet (this let's them harden a little, otherwise they tend to fall apart).

SO HOW'D IT GO?

These were a great hit with my omnivore friends! The first batch I stuck into the oven surprised me because the cookies spread a lot more than I expected, but they were still yummy. Next time I will try adding more oats and some flour like the previous poster said. The flavor was GREAT. Since I used cinnamon applesauce, I left out the cinnamon, and I grated a lot of ginger (since ginger is awesome and tasty). Thanks for the recipe.

These have great flavor and came out very well. I found the dough to be a little runny, so I added a handful more of oats and couple spoonfuls of flour. I also added some powder ginger and nutmeg on top. It was fantastic.
