Apple Cinnamon Pancakes

What you need: 

1 cup unbleached all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
2 tablespoons vegetable or olive oil
1 cup vanilla nondairy milk (I use soy)
1 teaspoon ground cinnamon
3 tablespoons apple sauce
1/2 teaspoon pure vanilla extract

What you do: 

1. Preheat an oiled griddle until hot. Combine the flour, vegan sugar, baking powder, salt, oil, and nondairy milk in a bowl and mix thoroughly.
2. Mix in the ground cinnamon, apple sauce, and vanilla extract until smooth.
3. Pour about 1/2 cup (for big thick pancakes) onto prepared griddle. In about 2 minutes, bubbles will appear on the upper surface of the pancake, flip the pancake with spatula. Cook for another 2 minutes.
Tastes great served with maple or fruit syrup.

SO HOW'D IT GO?

I just made these, yummy pancakes! I added diced apples which made it even better. I also used oat milk because that's what I had.

These were pretty good! I added a little more sugar and applesauce. I wasn't sure if I was supposed to be using the oil for the griddle or in the pancakes, so I just didn't use it at all :) The apple taste was a little light, so I definitely think adding in some apples would be a nice touch!

This recipe was delish...... subbed 1/2 cup extra applesauce for 1/2 cup of the soymilk. Also added extra cinn and sprinkled in roasted pecans. Pancakes were packed with flavor. Texture was also amazing!!! Thanks for the recipe!!!  :)>>>

OH... MY... GOSH!!!  These were the absolute best!  I used double acting baking powder and they were SO fluffy!  I've read through the comments and will try a few of your suggestions for next time but it's hard to improve on perfection!  ;)b

Delicious! I made some adjustments as well. I added another teaspoon of cinnamon and used 2 more tablespoons of applesauce instead of using any oil. I also added another tablespoon of sugar and put in some nutmeg as well. Served it with baked apple slices and used the sauce leftover from the baked apple as syrup!

I thought these tasted great, even though I didn't get much apple flavor from them.  We used ww pastry flour, a little extra applesauce in place of a tbsp of oil, and a little extra sugar.
