Amazing Chocolate Chocolate Chip Vegan Cookies

What you need: 

1 tablespoon ground flax seed
1/2 cup soy milk
2 cups sugar
2 teaspoons vanilla
3/4 cup canola oil
2 cups all pupose flour
3/4 cup dutch processed cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips

What you do: 

First off preheat your oven to 350 degrees Fahrenheit
Using a mixer cream together the sugar, flax seed, soy milk, and vanilla. After that is all mixed together add the canola oil and mix well. I suggest leaving the mixer on the lowest stir setting and preparing the dry ingredients while the oil mixes in.
In a separate large bowl sift together the flour, cocoa powder, baking soda and salt (stir it up well to make sure there are no clumps).
Leaving the mixer on the lowest stir setting, stir in the dry ingredients in batches. It will get thick. Mix in chocolate chips. -You may or may not want to use a whole cup...I usually use a bit less.
I find it works better if you allow the dough to sit for a couple to few minutes after it's all mixed. Then using a tablespoon, form balls out of the dough and place on an ungreased cookie sheet. I strongly suggest using parchment paper. Slightly flatten the balls of dough once all are on cookie sheet.
Bake for 10 minutes.
Then remove the cookies from the oven and let them cool for 5 or so minutes. After that move them to a wire rack and let them finish cooling.

Beware, they're quite rich. Eating more than 5 at a time has been known to end with people feeling a bit sick to their stomachs...;P
Source of recipe: The original recipe for the cookies wasn't my own, and unfortunately I cannot recall where it came from, however I've been making these cookies for a while and have made at least a few changes to the recipe -for the better- along the way. They're too good not to share this recipe...
