Stuffed Acorn Squash

What you need: 

1 acorn squash halved and deseeded

½ cup uncooked rice

Replacement for 1lb beef (I used TJ’s beefless ground beef)

½ Med. Onion diced fine

2 cloves garlic minced

2oz of Vegan Cheese (I prefer Daiya)

Olive Oil

Salt & Pepper to taste

What you do: 

Preheat oven to 350

Salt and pepper acorn halves and spritz with olive oil (I didn’t have a spritzer, so I poured a little olive oil into the acorn squash and spread it around). Put cut-side down in a microwave safe dish, cover with plastic wrap and microwave 10-15 minutes or until you can pierce it with a fork.

Meanwhile, cook rice according to directions.

Sauté onions, garlic and beef substitute until onions are translucent and beef is browned.

When rice is done, mix with beef mixture. Pack into acorn halves and cover with cheese. Bake for 15 to 20 minutes or until cheese is melted and slightly brown.

SO HOW'D IT GO?

It looks a bit messy. Maybe its the beef and the rice that got mixed and gives a look like that. So from which part of the world did this dish actually came from? Thanks for the recipe anyways. I will definitely give a try and write my experience here.
