Super 'effin Awesome Chocolate Chip Cookies
2 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon, optional
1/2 cup vegan margarine, softened
1/2 cup non-hydrogenated shortening
1 cup packed brown sugar
1/2 cup granulated white sugar
1/3 cup no sugar added applesauce
1 teaspoon vanilla
1 cup chocolate chips (I use Enjoy Life)
1/2 cup walnuts, chopped, optional
1. Preheat oven to 350 degrees F. In a medium bowl, sift together the flour, soda, salt, and cinnamon. In a large bowl, beat together the margarine and shortening until creamed. Add the brown and white sugars and beat until fluffy.
2. Add the applesauce and vanilla and beat until combined. Add the dry ingredients to the beaten mixture, beating until well-combined. Stir in the chocolate chips and nuts, if using.
3. Drop onto an ungreased cookie sheet by the tablespoonful and flatten slightly with the back of a wooden spoon. Bake for about 8-12 minutes (it varies depending on your oven). If you take them out while they're still wet-looking on top (but set), they will remain chewy. Let cool on sheet for about a minute then place on a wire rack (or dinner plate!).
Source of recipe: Tediously veganized from my Grandma's old recipe (she let me). They are old-fashioned cookie goodness.
