Chocolate Chip Oatmeal Cookies
1 cup margarine, softened
1 cup white or 1 1/2 cups raw sugar
1 cup packed brown sugar
5 tablespoons ground flax seed
6 tablespoons cold water
3 teaspoons vanilla extract
About 4 cups all purpose flour
1 teaspoon baking soda
2 teaspoon hot water
1/2 teaspoon salt (optional)
1 1/2 cups vegan chocolate chips
1 cup oats
1/4 teaspoon almond extract (optional)
1 cup walnuts (optional)
1) Cream margarine and sugars together until smooth.
2) Beat flax seed with cold water until gooey, add to batter. Add vanilla and almond extract. Mix baking soda with hot water, add to batter along with salt. Stir in flour, chocolate chips, and oats/nuts. drop large spoonfuls onto foil covered baking sheet. Bake for about 12 to 14 minutes at 350 degrees Fahrenheit.

SO HOW'D IT GO?
After I've made this recipe so many more times, I recommend these changes: only 2 tbs of flax with 6 tbs hot water is needed (I have no idea why I used so much, but you can use more if you want), 3 cups flour, 4 is way too much, and 1 1/2 cups oats. They will also seem too soft when they are actually done (golden around the edges).
