Best Binding Agent Ever!

What you need: 

1/3 cup oatmeal (equals 1 egg)
hot water (amount depends on desired consistency, but usually only slightly more than amount of oatmeal)

What you do: 

1. Combine oatmeal and hot water.
2. Heat in a pan for a minute or two, slowly stirring until you get the consistency you are looking for.
Source of recipe: Needed something that would hold together the bean burgers a little bit better..... It worked beautifully!

SO HOW'D IT GO?

It really depends on what your trying to bind together. For the longest time with pancakses, I would grind about about one teaspoon of flax feed (you can soak them if you don't have a good grinder) and whisked that with three tablespoons of water (until I had an egg-like consistency). If you try this, remember to use whole flax seed because their oils are released during the grinding process. Ground flax in containers will not work.

I like the ground flax but it can seem a bit dry. It does work with well other foods. For pancakes, I recomend apple sauce. Very simple. When I make them, it's just pancake mix, agave for sweetening and applesauce. They come out very light and fluffy. I've heard fresh banannes mushed up, work well too.

I am looking for a good binding agent for veggie burgers now. I've tried oats before and they tend to obsorb a lot of liquid and dry out the bugers. What about gacomole? Has anybody tried that before?

I tried to use this on pancakes but it is kind of vague. I've never done it before so I didn't know what the 'desired consistency' was, but it worked out ok. It made them much heavier so if I ever use it again for this purpose, I'll make sure to cook the pancakes slower but it tasted good. Thanks for the recipe!
